simple Chinese Cooking–Shanghai braised meatballs (Lion's head)

Shanghai braised meatballs (Lion's head)

1 ½ lbs. ground pork or minced pork tenderloin

2 oz. dried Chinese black mushrooms

5 stalks Chinese cabbage (bok choy)

4 oz. bamboo shoots

2 green onions

1 inch ginger root

1 egg

3 Tablespoons cornstarch

2 Tablespoons rice wine

2 Tablespoons salt

1 teaspoon sugar

2 cups cooking oil

4 Tablespoons cooking oil

1 teaspoon sesame oil

5 Tablespoons stock or water

1 Tablespoon soy sauce

 


Cornstarch paste:

2 Tablespoons cornstarch

2 Tablespoons water

Directions:



  1. Soak the black mushroom for 30 minutes. While you are waiting, this gives you the perfect time to prepare the rest of the ingredients.

     

  2. Dice the bamboo shoots into 1/8?pieces. You can usually buy fresh bamboo shoots from your local Asian markets, but if they are not available, canned bamboo shoots will do.

     

  3. Wash the bok choy, boil for about 3 minutes, and transfer to a serving plate.

     

  4. Finely mince the ginger root after removing the skin. Dice the green onions into 1/8?pieces.

     

  5. When the black mushroom is soft, remove the mushroom stem and dice into 1/8?pieces.

     

  6. Put the pork, mushrooms, bamboo shoots, green onions, ginger, egg, 3 Tablespoons of cornstarch, rice wine, salt, sugar, 4 Tablespoons of cooking oil, and sesame oil in a large bowl. Mix everything together thoroughly. Then knead the mixture into balls, each about a little smaller than a tennis ball.

     

  7. Heat 2 cups of cooking oil in a wok on high. Add the meatballs and fry until they appear brown on the outside. Remove the meatballs from the wok and drain off the oil from the meatballs..

     

  8. Discard the cooking oil in the wok, and pour the chicken stock (or water). Add the meatballs, and bring the stock to a boil. Then simmer for about 10 minutes. After 10 minutes, remove and place the meatballs on top of the boy choy already on a serving plate.

     

  9. Add the soy sauce to the remaining sauce in the wok, then add the cornstarch paste (be sure to mix the paste prior to adding to prevent clumps), and gently stir until the sauce thickens. Pour the sauce over the meatballs and they are ready to serve

¾ lb. pork spareribs

1 Tablespoon cooking oil

2 Tablespoons dried fermented black beans

1 Tablespoon Chinese rice cooking wine

½ teaspoon Salt

1 teaspoon sugar

1 Tablespoon light soysauce

1 Tablespoon cornstarch

2 Tablespoons chopped hot pepper

2 Tablespoons chopped garlic

 


Directions:


This dish utilizes both stir frying and steaming. The stir frying is to make the black bean sauce. You can buy black bean sauce in a container in your friendly neighborhood Asian grocer, but since they are already prepared, you don't have to add the some of the ingredients such as sugar, salt, and soy sauce. We recommend using the fermented black beans because it only takes a couple of minute extra to prepare, and the stir frying brings out the delicious aroma and taste of black beans unmatched by the ones in a container.



  1. Cut the spareribs into ½" x 1" long pieces. Wash and soak the fermented black beans for about 5 minutes. Strain off water and then chop them up into smaller pieces.


  2. Heat the wok on high, then add the cooking oil after the wok is hot. Stir fry the fermented black beans. Add the rice wine, sugar, salt, and soy sauce. Stir for only 10 seconds. Remove to a bowl and mix thoroughly with the spareribs.


  3. Add cornstarch to spareribs and mix thoroughly. Place all of the spareribs onto a plate or a bowl (make sure it fits in your steamer).


  4. Heat up the steamer. Sprinkle chopped red pepper and garlic on top of the dish. Put the plate/bowl in a steamer. Cover and steam over high heat for 20 minutes.


  5. Once done, transfer the spareribs to a serving plate to serve.

1 red chili pepper

15 slices ginger

4 cups cooking oil

2 Tablespoons cooking oil

 


Seasoning sauce:

2 Tablespoons soy sauce

1 Tablespoon rice wine

½ Tablespoon brown vinegar

1 teaspoon cornstarch

½ teaspoon salt

1 teaspoon sugar

 


Marinate:

½ egg white

1 Tablespoon cornstarch

1 Tablespoon soysauce

2/3 cups walnuts (or cashew nuts)

Directions:



  1. Dice the chicken into ½" pieces, and mix thoroughly with the marinade. Let it marinate for 30 minutes.

     



  2. Cut the green onion into ½" long pieces. Dice the green pepper, and red pepper into ½" pieces, and keep separate.

     



  3. Cut the walnuts in halves. Using medium high heat, deep fry 2/3 cup of walnut halves while continue stirring for 3 minutes or until golden. Remove the walnut halves and let cool.

     



  4. Using the same cooking oil in medium high heat, deep fry all the chicken pieces for 30 seconds. If the chicken pieces stick to each other, then that means the oil is too hot and you'll need to lower the temperature slightly. Remove the chicken and drain off the oil from the wok.

     



  5. Using high heat, pour 2 Tablespoons of the cooking oil in the wok, and stir fry the ginger slices. Add the green onion, quickly stir fry for a few seconds, then add the green pepper, red chili pepper, and stir fry for 30 more seconds. Add the chicken pieces and seasoning sauce. Stir until the dish is thickened and heated thoroughly.

     



  6. Place the dish onto a serving plate, sprinkle the walnut halves on top and serve.

½ lb. Chinese broccoli

1 green onion (sliced to ½" length)

1 slice ginger (diced)

1 Tablespoon soy sauce

½ teaspoon salt

½ Tablespoon rice wine

 


Seasoning sauce #1

1 cup water

½ teaspoon salt

1 teaspoon sugar

1 pinch of Szechuan peppercorn

 


Seasoning sauce #2

2 Tablespoons oyster sauce

¼ Tablespoon sesame oil

½ Tablespoon cooking oil

 


Cornstarch paste

½ Tablespoon cornstarch

½ Tablespoon water

Directions:



  1. Cut the chicken wings in halves at the joint to make 24 pieces. Marinate the wings with 1 Tablespoon of soy sauce for 15 minutes. Then stir fry the wings in a wok until they appear golden. Remove them into a bowl for use later.

     



  2. Cut the Chinese broccoli into about 3 inches long pieces. Put them in boiling water, add ½ teaspoon of salt, and mix gently for 1 minute (or when they turn bright green). Remove them from the wok, and "shock" the Chinese broccoli by dipping it in cold water briefly (this makes sure the Chinese broccoli retains the bright green color, instead of turning brown, which ruins the presentation of the dish). Line them up on the serving plate in any decorative pattern you prefer.

     



  3. Heat up the wok on high, then pour in 1 Tablespoon of cooking oil. Stir fry the green onion and minced ginger for 10 seconds, then add the chicken wings and ½ Tablespoon of rice wine.

     



  4. Add the seasoning sauce #1, cover up the wok with the lid. Lower the heat to medium and cook for 15 minutes.

     



  5. Turn the heat back on high after 15 minutes, add the seasoning sauce #2 and gently stir. When the dish heats up, add the cornstarch paste and gently stir until it's thickend. Transfer into a plate and serve.

1 cup rice powder

½ teaspoon ground Szechuan peppercorn

½ green onion (chopped)

Marinade:

2 green onions

3 slices ginger

1 star anise

2 Tablespoons soy sauce

1 Tablespoon rice wine

1 teaspoon sugar

1 teaspoon salt

3 Tablespoons cooking oil



Directions:

  1. Mix the marinade well. Cut the round beef into small slices about 1 1/2" squares and 1/6" thick. Marinate the round beef in the marinade for about 30 minutes.

  2. Dredge the round beef pieces by sprinkling each slice with the rice powder to give it a thin coat. Then steam them in a shallow bowl inside a steam basket over high heat for 20 minutes.

  3. Once steamed, sprinkle some chopped green onions and Szechuan peppercorn powder over the beef, and it is ready to serve.

8 oz sirloin beef
3 green peppers
1 green onion
3 slices ginger
½ teaspoon sugar
1 teaspoon salt
1 cup cooking oil
3 tablespoons cooking oil


Marinate:
2 Tablespoons soy sauce
1 Tablespoon cold water
½ Tablespoon wine
2 teaspoon cornstarch
½ teaspoon salt
1 Tablespoon cooking oil

Directions:

Shred the sirloin beef to about 1" long strips, mix with the marinade and marinate for 1 hour.

Clean the green pepper, remove the seeds and membrane, then cut each in halves and also shred into 1" long strips. Shred the green onion and ginger also into 1" long strips.

Heat 1 cup of cooking oil in a wok, stir fry the sirloin strips briskly over high heat about 10 seconds. Remove the sirloin strips and discard the cooking oil.

Heat another 3 Tablespoons of cooking oil in the wok. Stir fry the ginger and green onion, then add the shredded green pepper, salt, sugar and stir well. Add the sirloin strips, blend thoroughly for 20 seconds. Remove everything onto a plate and serve.

½ can golden sweet corn
1 cup diced tomatoes ( ½" x ½")
¼ cup green peas
6 cups soup stock or water
2 Tablespoons oil
2 teaspoons salt
½ Tablespoon rice wine
1 egg white


Soup paste:
4 Tablespoons water
4 Tablespoons cornstarch

Directions:

Heat 2 Tablespoons of cooking oil in a wok. Pour in the rice wine and then 6 cups of soup stock immediately. Then add the sweet corn and mix well. Cook until the soup boils.

Season with 2 teaspoons of salt. Then add the tomatoes. When it boils again, add the green peas, reduce the heat to low and pour in the cornstarch paste (remember to pre-mix the paste) slowly. Stir well until the soup thickens.

Beat the egg white and slowly pour it into the soup while carefully stirring the soup. Turn off the heat immediately. Pour in a soup bowl and serve.

1/3 lb. spinach
2 pieces 3" by 3" bean curd (Tofu)
4 oz ground pork
1 teaspoon cooking oil
6 cups soup stock or water
2 teaspoon salt
2 to 3 drops sesame oil


Paste
4 Tablespoons cornstarch
4 Tablespoons water

Directions:

Shred the spinach into thin strips about ½" long. Cut the bean curd into 1/3" inch cubes.

Heat the wok in medium heat. Pour 1 teaspoon of cooking oil in the wok, stir fry the ground pork until slight browning occurs (about 2 minutes).

In a sauce pan, boil 6 cups of soup stock. Add the ground pork, and bean curd. When it boils again, thicken the soup with the cornstarch paste (remember to pre-mix the paste). Then add the spinach, and stir until it's blended.

Turn off the heat. Pour the soup in a soup bowl. Add 2 to 3 drops of the sesame oil, and sprinkle some black peppercorn (optional), and serve.

3 green onions
4 Tablespoons soysauce

3 Tablespoons brown vinegar
5 Tablespoons cold water
½ Tablespoons rice wine
2 teaspoons cornstarch
1 teaspoon sesame oil
6 cups cooking oil

Directions:

Cut the spareribs into 1" square pieces, then marinate with rice wine and soys auce for about 30 minutes. Keep the sauce in the bowl, since this will become the seasoning sauce later.

Heat 6 cups of cooking oil in a wok on high setting. Deep fry the spareribs for about 2 minutes, and take them out. Heat the cooking oil again, then deep fry once more until spareribs for about 15 more seconds or until they turn very brown. Remove the spareribs and drain off the cooking oil from the wok.

Add sugar, vinegar, water, cornstarch, sesame oil and shredded green onion to the bowl used for marinating the spareribs. This is now the seasoning sauce.

Heat one teaspoon of cooking oil in the wok, pour in the seasoning sauce, boil and stir until it is thickened and heated thoroughly. Then add the spareribs and stir well. Place the spareribs on a plate to serve.

6 oz. ground pork

4 oz. shrimp

½ lb. Chinese cabbage

20 pcs Spring roll skins

6 cups cooking oil

1 Tablespoon soy sauce

1 teaspoon salt

½ cup soup stock

1 Tablespoon flour

Marinade:

½ Tablespoon soy sauce

1 teaspoon cornstarch

Paste:

1 Tablespoon cornstarch

1 Tablespoon cold water

Flour paste

1 Tablespoon all purpose flour

1 ½ Tablespoon water


Directions:


  1. Marinate the ground pork and the shrimp with soy sauce and cornstarch. Shred the Chinese cabbage into string shapes about 1
    ½" long.

  2. Heat 5 Tablespoons of cooking oil in the wok, stir fry the ground pork and the shrimp for about ½ minute, drain and put it aside.

  3. Put the shredded cabbage into the wok, stir fry a moment, add soy sauce, salt , and soup stock. Cover the wok with a lid, and
    cook for about 2 minutes.

  4. Add the ground pork, the shrimp, and stir fry for another ½ minute over high heat. Mix the cornstarch paste well, then stir in
    the cornstarch paste until it's thickened and you have the filling for the Spring roll. Remove the filling into a bowl.

  5. Place one Spring roll skin on a lightly floured board such that an angled edge is facing you. Put 2 Tablespoons of the filling on
    the spring roll skin, about 1" from the edge that is toward you, roll once or twice, then fold both sides toward the center, and
    continue rolling into a tight roll. Brush the outer edge of skin roll with the flour paste . Place this side face down to hold
    tightly and to keep its shape until time for frying. Repeat this step to prepare more Spring rolls.

  6. Heat the cooking oil in the wok, deep fry the spring rolls 10 at a time or as much as the wok allows. Using high heat, deep fry
    for about 3 minutes or until golden. Now they are ready to serve.


    Note: can use either a mixture of soy sauce and a few drops of vinegar, or sweet and sour sauce as dipping sauce.

Servings: 3-4cooking


2 ½ cups all purpose flour

1 cup cold water

¾ lb. ground pork

¾ lb. Chinese cabbage

2 Tablespoons chopped green onion

½ teaspoon chopped ginger

2 Tablespoons soy sauce

1 teaspoon salt

2 Tablespoons cooking oil

Dipping sauce

soy sauce

cilantro

vinegar

red chili oil

mashed garlic


Directions:


Note: Steps 1 and 3 are directions to make the dough and the pancakes for the dumpling. If you'd like to save some time, dumpling
wraps can be purchased at your local Asian market. Although, it probably will not taste as good as the dough you make on your own :-).


  1. Place the flour in a bowl. Slowly add water, mix with your fingers and knead to form a soft dough, then cover with a damp cloth. Let
    the dough stand for at least 15 minutes.

  2. This step is to make the filling for the dumpling: Mix the ground pork, green onion, ginger, soy sauce, salt, oil all in a bowl
    thoroughly, then add the chopped Chinese cabbage. Mix thoroughly to make the filling.

  3. Remove the dough to a lightly floured board, knead again until it's very smooth. Divide the dough into 50 pieces. Flatten each
    piece with your hand and roll into a round thin pancake using a roller(about 2 1/2" diameter, the center should be thicker than the
    edges).

  4. Place ½ Tablespoons of filling in the center of each pancake, fold it over the filling. Hold the dumpling in one hand, press the
    edge between your thumb and your index finger to seal, and work your way all the way around the rounded edge.

  5. Boil 8 cups of water in a deep pan, drop the dumplings one by one into the boiling water (about 20-30 dumplings each time, depending
    on the size of the deep pan). Stir carefully with a large spoon to prevent them from sticking to the bottom of the pan. Continue to cook
    until the water boils up again.

  6. Once the water boils again, add 1 cup of cold water to the deep pan, and let come to a boil one more time. Remove the dumplings with
    a slotted spoon to a plate and serve. Dip the dumpling into the dipping sauce and eat.
